This Mozzarella baked chicken recipe is full of wonderfully fresh and healthy ingredients, and is so simple and easy to make!
Ingredients you need for the Mozzarella Baked Chicken Breasts
- 2 skinless, boneless chicken breasts
- 2 cups cherry tomatoes, halved
- 1/4 cup chopped red onion
- 3 garlic cloves, minced
- 1/4 teaspoon salt, divided
- 1/4 teaspoon black pepper, divided
- 1/2 teaspoon Italian seasoning, divided
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon crushed red chili pepper flakes
- 1/2 cup shredded mozzarella
- 1 tablespoon chopped fresh basil for garnish
This ingredients which mentioned is for 1 person. If you have to make for 3 or 4 person you can increase the amount of ingredients
How to make the mozzarella baked chicken breasts:
1. To make the baked chicken breasts with tomato & mozzarella: Preheat oven to 400°F (200ºC). Pat the chicken breasts dry.
2. In an oven-safe dish, place the cherry tomatoes, red onions, garlic, salt, pepper, and Italian seasoning. Pour the olive oil on top, and toss until well combined.
3. Place the chicken breasts in the middle of the baking dish. Add the remaining Italian seasoning, salt, pepper, and crushed red pepper flakes on top of the chicken breasts. Drizzle olive oil if desired.
4. Bake in the preheated oven for 25 minutes, until the tomatoes soften and the chicken is almost cooked through.
5. Remove from the oven (don’t turn off the oven) and sprinkle chicken with shredded mozzarella and more spices, if you like. Return to the oven and bake for another 10 minutes, until cheese is bubbly and chicken registers 165ºF (74ºC) with an instant-read meat thermometer.
6. Add fresh basil leaves and serve the baked chicken breasts with a side of your choice. Enjoy! ❤️🍗
